- the level of production of pancreatic juice, which contains special enzymes necessary for the digestion of protein, carbohydrate and fat molecules, is reduced,
- the activity of the gland decreases due to its participation in metabolic processes,
- the synthesis of certain groups of hormonal components in the body is disrupted.
Patients with a pancreatic diagnosis are allowed to eat omelet, subject to the following rules for its preparation:
- the cooking process must take into account aspects of the prescribed nutritional diet, therefore this dish must be steamed,
- Scrambled eggs should not contain chicken egg yolks; they should first be separated from the whites by placing them in a separate bowl,
- in case of exacerbation of pancreatic pathology, all dishes containing eggs are completely excluded from the diet,
- with the beginning of a decrease in the intensity of the manifestation of an aggravated pathology or the establishment of a stable remission, it is recommended to introduce this dish into the diet with extreme caution and minimal doses,
- if the recipe contains yolks, then when preparing the dish their volume should be reduced by half the specified amount,
- The omelette must be brought to full readiness in strict order, since a raw dish may contain infectious pathogens,

In the acute phase, consumption of egg yolks can cause a number of undesirable effects: nausea and vomiting, diarrhea, severe abdominal pain. In addition, the yolk has a choleretic effect, and in case of inflammation of the pancreas this is very dangerous. Allergy sufferers should approach egg dishes with extreme caution, as this product is a strong allergen.
The method of preparation is also important: since you can easily become infected with salmonellosis by eating eggs, any dishes made from them must be sufficiently kept on fire or in a slow cooker. Another tip that will help protect you from infection is to buy only labeled products, and before breaking eggs, wash them thoroughly with antibacterial soap.
During the period of exacerbation of the disease, dishes with the addition of eggs or the pure product should not be eaten. As the symptoms of the disease subside, after 6-7 days you can start consuming boiled proteins, but in limited quantities (no more than two per day). At the same time, the introduction of this product into the diet must be carried out with extreme caution, starting with minimal doses and monitoring the body’s reaction. Also, over time, provided that the condition remains consistently good, it is allowed to add yolks to dishes, but in this case their volume should be halved, that is, if an omelet is prepared from two eggs, then there can only be one yolk in it. When bringing egg-based dishes to full readiness, you should always wait until they cool down: hot food injures the gastrointestinal mucous membranes and can thereby provoke unpleasant consequences.

- Add a little milk to the whites, add a little salt
- If you want to add greens to the omelette, then chop the greens and add to the resulting mixture.
- Beat with a fork, whisk or blender (who knows what!)
- Pour the resulting mixture into a serving container, which we place in a double boiler.

With the development of pancreatitis, there is a need to follow a diet; it is especially important to adhere to a diet during the acute phase of the disease or during periods of its exacerbation. Avoiding fatty, hot and spicy foods will reduce the load on the damaged organ and speed up the process of its recovery.
In case of acute clinical manifestations, gastroenterologists recommend two to three days of fasting, after which it is necessary to gradually introduce easily digestible foods: mucous porridges, vegetable soups, purees, jelly. Eggs are strictly prohibited at this stage. Even a steamed protein omelet can aggravate the general condition. Other dishes that contain this product are not allowed: cutlets, zrazy, soups, baked goods, salads. This is due to the fact that eggs, or rather their yolks, are saturated with a large amount of fat, which puts a strain on the inflamed pancreas.
