Dishes that can be prepared for pancreatitis

Steamed cutlets. For preparation you will need:

  • beef (250 g);
  • bread (40 g);
  • milk (3 spoons);
  • olive oil (3 l);
  • a little salt.

Make minced meat and add the remaining ingredients. Form balls and place them in a steamer. Add water and boil for half an hour.

Soup with homemade noodles with milk. Take:

  • two eggs;
  • milk (half a liter);
  • a little butter (15 g);
  • 15 g sugar;
  • 150 g flour.

Make the dough, salt it a little. Cut noodles from the dough. Boil it in milk and sugar.

Meat pudding cooked in a double boiler is also suitable for dietary nutrition. The recipe consists of beef (250-300 g), butter (50 g), semolina (30 g), 1 egg. Boil the beef, cool and grind in a blender. Add semolina and egg. Mix everything and shape the improvised dough. Grease a steamer with oil and place the pudding in it to cook.

Sweet dish for dessert. We “extract” the white from the egg, beat it with sugar (40 g) and vanilla. Make balls and drop them into boiling water using a spoon. After the dish has cooled, pour the sauce over it. It is done like this: chopped strawberries are mixed with flour and sugar.

A cake that doesn't need to be put in the oven. You will need a cormorant with peach, non-acidic yogurt, cookies and gelatin. Dissolve it in water. Mix with yogurt. Place in the mold in layers: cookies, yogurt with gelatin, banana cut into rings, yogurt, peaches, yogurt.

Make compote from dried fruits. It's better if it's apples. Wash and boil them in strained water (a handful of dried fruits per liter of water). Add some sugar. Cool and strain. In case of acute pain, it is better to wait a while with the compote and start drinking it from 4-5 days. Don't add sugar. In chronic forms of the disease, doctors do not limit the use of apple decoction.

Beet salad recipes

  • lean meat (you should choose sirloin without fat streaks);
  • dried bread;
  • omelettes are predominantly white, perhaps adding half a yolk;

  • cooked pasta products;
  • weak tea with lemon, rosehip infusion.

What foods are strictly prohibited when diet No. 5p is prescribed?:

  • meat and fish broths;
  • any alcohol;
  • strong tea and coffee;
  • any sausage products;
  • smoked products;
  • bakery products and fresh bread;
  • kefir, yoghurts;
  • foods that irritate the mucous membrane of the stomach and intestines (sour and spicy);
  • sauerkraut and vegetables;
  • chocolate, pastries, cakes;
  • Any fried food is prohibited;
  • legumes;
  • fats of animal origin.

The diet for pancreatic disease excludes foods that can provoke acid formation in the stomach and the release of large amounts of enzymes. It is necessary to strictly observe the daily caloric intake (up to 1700 kcal for acute pancreatitis and up to 2700 kcal for chronic pancreatitis).

As a rule, doctors strongly recommend following the 5p diet for 6-12 months, or even throughout your life.

Dietary products should only be fresh and of good quality. Therefore, in case of pancreatitis and cholecystitis, it is necessary to reconsider the diet and its qualitative composition.

To maintain good nutrition, you need to learn how to cook dietary foods correctly and tasty; below are possible recipes for dishes for pancreatitis and cholecystitis. Recipes for dietary dishes for patients with acute and chronic pancreatitis :

  1. Oatmeal. To prepare it you will need three tablespoons of oatmeal, 200 milliliters of water, salt and a piece of low-fat butter. Pour the flakes with water, add a little salt and bring to a boil with constant stirring. Then turn off the heat, close the lid and leave for 5-10 minutes. When serving, add a piece of butter.
  2. Milk pumpkin rice porridge. This is a very tasty and healthy dish used for pancreatitis and cholecystitis. To prepare it you will need half a kilogram of pumpkin, seven tablespoons of rice, 200 grams of skim milk, a piece of butter, a pinch of salt and sugar. The peeled pumpkin is cut into small pieces and filled with water so that it completely covers the pumpkin. Add sugar and salt and cook. When the pumpkin has become soft, add the rice and cook until it is ready. When the water has almost completely evaporated, add milk. After it boils, turn off the heat and cover with a lid. When serving, add a piece of butter. The exception is acute pancreatitis, in which the porridge is cooked exclusively in water. Pumpkin recipes are quite simple; even a child will like this porridge.

Is it possible to use vinaigrette for pancreatitis?

A source of vitamins that replenishes deficiencies is vinaigrette. It can improve appetite, normalize food digestibility, and prevent constipation. Vinaigrette for pancreatitis is prepared according to a modified recipe. Surprisingly, this does not negatively affect the taste. On the contrary, the salad turns out tasty and juicy. You will need:

  1. Medium beets - 1 piece.
  2. Potatoes – 2 pieces.
  3. Barrel or pickled cucumber – 1 piece.
  4. Sauerkraut – 1 cup.
  5. Dill.
  6. Olive, vegetable or sunflower oil.

Boil the beets without adding salt for 90 minutes. Then drain the liquid and add cold running water. Boil the peeled potatoes for half an hour. Soak sauerkraut in cold boiled water for half an hour. This trick will help remove excess acid and salts. We also soak the cucumber cut in half for half an hour in cold water.

Meanwhile, cut the peeled beets into cubes. Place the vegetable in a container and add a small amount of vegetable oil. Mix thoroughly. Next, peel the cucumber, first rinsing it under water. After cutting into cubes, place in a salad bowl with the beets. Add washed and finely chopped dill to the salad. Only greens are used. We also cut the peeled potatoes into cubes. Wash the sauerkraut thoroughly and squeeze it out. Mix the components. The vinaigrette is ready!

In case of chronic disease, salad is consumed in small portions, which should not exceed one hundred grams. In the weekly diet, vinaigrette is present once or twice. The dish is eaten fresh and warm. Chilled salad can harm the pancreas. In case of exacerbation and acute attack, salad is strictly prohibited.

Among the dangerous properties of lettuce for pancreatic disease are stimulation of secretion, irritating effect, increased swelling. Salts in the composition and coarse plant fiber can cause a new inflammatory process, therefore, for pancreatitis, vinaigrette is recommended only with the permission of the attending physician. The salad is introduced gradually, carefully monitoring the reaction of the gastrointestinal tract to the components.

Mashed potatoes and cereals are considered easily digestible; they do not overload the digestive organs. This food is suitable not only for pancreatitis, but also for cholecystitis.

Steamed fish cutlets

Pass 300 g of low-fat white fish fillet through a meat grinder. Add 2 pieces of white bread soaked in milk and minced to the fish. Mix. Beat the white of one egg with a fork and add to the fish mixture. Form cutlets. Steam the cutlets for 20 minutes.

Rice porridge with cottage cheese

Rinse 40 g of rice, add 300 ml of clean water, add 1 tsp. Sahara. Cook over low heat for 25 minutes, making sure the rice does not burn. Cook the rice until completely cooked. Place the finished rice in a high bowl, add 50 g of low-fat cottage cheese and 1 tsp. butter and beat with a blender.

2 tbsp. Grated raw carrots must be poured with boiling water and boiled until soft, drain the water (it can be left for vegetable broth). The resulting mass must be ground until smooth and cooled.

Beat 2 chicken whites into a strong foam along with 80 g of sugar, add 100 ml of milk and carrot puree. Grease a baking dish with a thin layer of butter. Mix the resulting mixture thoroughly and put it in the prepared form, which is placed in a deep baking tray with water and placed in the oven for 30 minutes at a temperature of 180 °C.

Meat soufflé

A diet for pancreatitis can be called protein-carbohydrate. As a protein component, you can include in your diet simple, steamed portioned pieces of meat or fish, cutlets or meatballs with a side dish of vegetables or cereals. Or you can prepare a meat soufflé. To do this, meat or fish must first be cooked and chopped in a blender or meat grinder. For one serving you need to take 450 g of lean meat. Can be used:

  • lean beef or pork;
  • chicken, turkey or rabbit fillet.

Add 200 ml of milk, 2 raw eggs, 80 g of low-fat cream to the meat paste. The mass is thoroughly mixed until completely homogeneous.

Place the resulting mixture into the prepared pan. Cook by steaming or in an oven preheated to 190°C for 35 minutes.

Diet soups

From the most ordinary products it is possible to prepare unusual dietary soups. One of the options for every day is vegetable puree soup. For it, take 1–2 cauliflower inflorescences, 2 small potatoes, and one medium carrot. During the recovery stage, you can use one small onion.

The cabbage, divided into small inflorescences, is soaked in salted cold water for 15 minutes and washed. The remaining vegetables must be peeled and cut into cubes, leaving the onion whole. Place vegetables in boiling water (1.5 l), add salt. After 15 minutes, the onion is removed. The remaining vegetables are taken out, chopped with a blender and placed back into the broth. Bring to readiness. You can add 20 g of butter to the finished soup.

Another version of cream soup for patients with pancreatitis can be considered an example of a tasty combination of meat and vegetables.

For 1 liter of water take 1 young zucchini without skin and seeds, 2 medium potato tubers, 2 tbsp. l. grated raw carrots, a little dill, 1 boiled chicken fillet.

Boil the vegetables for 20 minutes, then remove and chop. Place the vegetable puree back into the broth, bring to a boil, add finely chopped meat, herbs and 10–20 g of butter.

Cooking quenelles

Dumplings are an alternative to regular cutlets and meatballs. For example, consider chicken quenelles. 2 chicken fillets, chopped until smooth, need to be delicately salted. To 2 parts of minced meat you can add 1 part of cauliflower puree, soaked white crackers or 1-2 tbsp. l. semolina. Add 1 chicken protein to strengthen the minced meat.
